What’s a Macaron?

A macaron (MAC-ə-RON), is a French dessert made by sandwiching two meringue-based cookies around a delectable filling.

The melt-in-your-mouth shells generally contain egg whites, almond flour, sugar, and food coloring. Other tree nuts like pistachios, pecans or walnuts can be substituted too.

Macarons are notorious for being a difficult dessert to make right, add that on top of baking at a high elevation and the issues multiply. We love a good challenge, but with enough patience the perfect macaron can be achieved.
